I want to get a CFW for my PSP 3000 but I don't know which will brick it or not. So any suggestions on what I could use? The best would be preferable.

What OFW are you on now? If it's < 6.20, update to 6.20's cfw.

If > than 6.20, update to 6.60 and use that firmware. (Pro C)

The difference between the two is 6.20 can be permanent, while 6.60 isn't, but has some better compatibility.

Note that the 6.20 CFW can brick your PSP if you try to install the Perma hack. However, there is a Brick-free test you can perform.

Once on 6.20 Pro, run the test. If it quits back to the XMB, you're good to go.\
If it freezes at the Screen, it's a no-go. Meaning, if you try to install the perma patch, you'll brick your PSP.

For a side note on jastolze's post,

I've had problems on PRO-C with the psp 3000 series.
(But oddly not on the Go series)
PRO-B works somewhat flawlessly. If you plan on updating on 6.60 OFW.

You simply will need to launch the 660 PRO-B Fast Recovery game to "re-hack" your device to access the VHS Menu and Recovery Menu.
